For “YOU” to Enjoy Summer – Use This 1 Word More

Welcome to July !!!!! My favourite month of the year!

Even though I live in the warmest part of Canada – summer still goes WAY too fast…Do you feel the same? Are you trying to cram so much into such a short time.

Now if you have 2 months vacation fine, but when you don’t – oh my! Instead of relaxing fun time, summer can end up being very stressful.

But you know what? It doesn’t have to be that way. Really! Remember, you ARE THE ONE IN CONTROL, you are the one who is responsible for how you live your life. (I know that sometimes we cannot turn out backs on someone and they need us and we have to be there for them – that is not what I am referring to in this article)

It is the decisions you’ve made in the past and the ones you are making now that determine what your life is like… NOW and in the FUTURE. Remember that. We often blame others or circumstances for the way our life is, instead of seeing that we chose it by each feeling, each word, each action and each decision we make each minute of every day.

So….back to my message of the day – which I do want to be light – I will leave the “heavy” stuff for winter.

I was walking with my dog on one of the really hot days – I actually was wearing a sun dress so you know it HAD to be hot – and I stopped and filmed a video because I have a really important message I wanted to relay to you

I know, and you probably do too (maybe it is you) – a person that continually does so much for others and leaves themselves last. They end up exhausted, worn out, frustrated, resentful and ready to give up. OR they don’t even really realize that they are consistently putting themselves last. Does that sound like you? Do you often do this? Do you realize that you are doing this? Do you want to change it but are afraid to?

Since summer goes so fast, shouldn’t YOU enjoy it?

I ask you this: “What do you want to do this summer?”

I mean “YOU”, not your kids, not your mother, not your spouse (well, it may include these people but you will see what I mean)….

How do you want to spend your summer?

Rushing around like mad, working like crazy before your holiday. Packing, getting things ready then when you are there you are cooking, cleaning, organizing things. When you get back, you are behind at work and have to work over-time to catch up. Doesn’t sound relaxing does it.

Summer is not just the 1, 2 or even 3 weeks of holidays. Summer is from June 21st to September 21st. That means you have time within those days, weeks and months to spend some special time doing what you really want to do and actually enjoy the summer.

You can. You can do things (without going anywhere) that make a day, an afternoon, an hour – really special for YOU. Just you.

But… may have to start using one special word.

Get used to using this word and have a better summer. In the video I also talk more about what I mean and the things you can do to make each day special and bring you joy and isn’t that what life is all about? Or shouldn’t it be? Why not make each day in the summer have some aspect of “summer holiday fun & relaxing” in it.  (You have time to watch this, it’s only 4 minutes)

And now for a delicious BBQ recipe and this one is great for the vegan and vegetarian. It is meaty and delicious and can be eaten so many, many ways.

While others are enjoying their hamburgers and hot dogs you can be eating your Portabello Mushroom Burger!



Mushroom Marinate:

  • 3 Tbsp extra virgin olive oil

  • 2 Tbsp Tamari (or Braggs aminos) or 1.5 Tbsp coconut aminos

  • 1 1/2 tsp Apple Cider Vinegar

  • 1 clove garlic grated (optional)

  • 1/4 tsp grated ginger (0ptional)

Add above ingredients into a bowl and whisk

De-stem portabello mushroom and clean (rinse lightly and dry with paper towel)

Place marinate in a bowl or container that will fit mushroom in

Put in mushroom – top down and swirl around, take a spoon and spoon marinate all over the mushroom – top and bottom and sides

Let mushroom sit in marinate for over 20 minutes (if you have time). You can even put in fridge all day or all night if you wish  (cover it up if you do that)

BBQ like you would a burger. Watch as the marinate will drip off and may cause flames

Cook on both sides – note the mushroom will shrink and you want it cooked all the way through. But how “cooked” you want it is up to you.

There are MANY ways you can enjoy this BBQ Portabello. You can eat it like a burger – with a bun and all the fixings.
OR you can use it more like a steak and cut into thin strips and add to a salad, some sautéed greens (as I did in pic below) or stuff it when it is on BBQ (or in oven).

Have it stuffed

ANOTHER SUGGESTION: (no pic) use the mushroom as the bun and have two with the fixings in the middle and then maybe wrap in two larger pieces of leaf lettuce – messy but would be good!

I had mine the other night stuffed with avocado salsa (added after it was cooked) and it was so good!! But I also love it sliced over sautéed mustard greens – YUM!

Next time I am going to dress it up like a burger – will probably even add a couple pickles! But I will use lettuce as a bun.

Ahhhh….so many possibilities – have fun with it!
