A Perrrrrfect BBQ or Picnic Salad

Wow, an amazing beautiful day today!! Loving that the weather is getting nicer. I wish you a sunshiny day!

I wish I would have taken a picture earlier as the lake was just like glass! I am off to take my dog for a walk here soon and I hope that you also get a chance to get outside when the weather is nice. Summer goes by so fast.

You gotta make time to get out in the sun and fresh air. It is good for your body and spirit!

I used to eat kale salads often but then like many things you eat so much and then time for something new.  I had a lot of kale from the garden as well as some ripe avocados so I decided to make some guacamole (which I love). Instead of making a separate kale salad dressing I used the guacamole.

I wanted a slightly different taste to my guacamole so I added some spice! – some chill powder and cayenne. Now this would be EXCELLENT if you added Jalapeños instead of cayenne (highly suggest) but I didn’t have any.

I love making a sauce or dip and then finding many ways to use it. This recipe is smaller (only  used 1 avocado) so I used it up fast – 2 salads. If you love it – then double the batch. Feel free to make it your own by adding anything you think would make it taste SUPERB!

Now chill guacamole would also be great with/on:

  • Organic tortilla chips, in a wrap, on a cracker or rice cake, added on a lentil or black bean burger, any burger, in some black bean soup, on fish, mixed right in some salsa, on potatoes, with an egg – ahhh…it is really endless!

CHILI’N GUACAMOLE

  • 1 avocado

  • juice of 1 lime (or less – start with less, add to taste)

  • 4 cherry tomatoes chopped (or about 1/4 C tomatoes chopped)

  • 2 small green onions chopped (2 Tbsp regular onion fine also)

  • 3-4 Tbsp chopped yellow bell pepper (small pieces)

  • 3/4 tsp (or more) chill powder

  • 2 shakes of cayenne (or sub with some jalapeño pepper)

  • Salt to taste

  • Cilantro would be great in this – I didn’t have any so feel free to add

Add avocado and lime juice to a bowl. Stir to mix. Add other ingredients and mix. Taste and adjust to taste!

CHILI’N KALE SALAD

  • 2 C of chopped or ripped kale (take off stems first)

  • 1 C other salad mix or romaine (if you wish)

  • chill guacamole

  • 3 chopped cherry tomatoes

  • 2 Tbsp chopped yellow bell pepper

  • 3 radishes thinly slicked (optional but good added)

NOTE: You can make this salad as large as you want. This is just a small one. Double chill guacamole recipe to make more and make a huge salad as it will keep in the fridge for about 2 days.

Add kale to a bigger bowl, add some of the chill guacamole. Get your hands in there and squish, mix the guacamole (massage) it into the kale. Kale will absorb the guac so add enough.

Add the other ingredients and then stir well. Add more of the chill guacamole until it tastes perfect to you!
