Things you can do with vegetables that make them fantastic! I have a ton of ideas here for you in this How-To-Thursday video and blog post. Vegetarian and vegan recipe ideas using vegetables.
Now I LOVE my veggies and I have thousands of ways to prepare them. Today I am giving you some ideas and showing you a few different ways of preparing vegetables – besides just cutting them up into little squares and throwing them in a salad or munching on carrot sticks. I break out my spiralizer and give you many ways of using your “veggie noodles” (cooked and raw).
Also – you DO NOT need a spiralizer to make veggie noodles – I show you ways of doing it with simple kitchen tools.
There are probably many people enjoying a lot of food this weekend and please don’t leave out the veggies!! Remember the tips I gave you in my last e-mail t0 you (April 14th) and use those tips can really help you this weekend.

I had fun making this but yes, it is a lot of info in a short amount of time.
I got so many ideas when I was prepping and putting everything together and then afterwards so I am going to put them in a recipe book. But below I wrote out the ideas and suggestions that I covered in the video
IDEAS MENTIONED IN THE VIDEO
Prep veggies ahead of time even if you are not sure what you are going to do with them
Use them in salads, stir fry, scrambled eggs, juice, raw soup, cooked soup, salad dressing, raw pate or dip, raw crackers, cooked muffins, tomato sauce
Spiralize veggies and use:
as raw noodles – add a raw sauce or salad dressing
saute in a stir fry
use in raw or cooked soup
Yam noodles or zucchini – bake in oven with oil, salt and pepper
Yam noodles – chop and fry like hash browns
Saute noodles with oil, garlic, ginger, onions and greens
Use the veggie peeler and make raw noodles with:
Zucchini, carrots, daikon, jicama, broccoli stalks, cucumber
These noodles can kept raw and topped with a raw sauce or salad dressing
Salad dressing I talked about in video: 1/4 C extra virgin olive oil, 2 Tbsp lemon juice, 2 tsp nutritional yeast, salt & pepper
Cook the noodles slightly – season simply with olive oil, salt, pepper, any spices or nutritional yeast
OR add noodles into a soup – right before soup is done.
Add to sautéed veggies
Handtool that makes thin match-stick strips of veggies (the blue thing with the spiralizer):
Use on carrots, zucchini, daikon, jicama, beets, broccoli stalks, kohlrabi – anything else you can think of
Use those match-stick veggies in/for:
Stir fry, scrambled eggs, muffins, sushi rolls, salad, rice wraps, frittata, mix with lentils, buckwheat sauté
Many ways to eat cauliflower:
Make a raw rice (in food processor – garlic, ginger, salt, pepper, touch of tamari, cilantro or parsley)
Cook and mash like mashed potatoes – add garlic, salt, pepper, coconut oil or olive oil
Bake in oven – cut into thin steaks (as see in video), or cut into pieces and add olive oil, salt, pepper and spices of choice (show you some in video)
