Wild Rice Salad with 2 Dressings

Whew! What a day. I am getting ready for my live workshop this Saturday and I have been working since really early this morning. Looking so forward to the workshop as I LOVE doing them – but man…..lots of work.

Today in the video I am dressed very casual as I was making my lunch (late lunch) and decided to make it my “How-To Thursday” Video. Bit of multi-tasking on my part but I know you are going to like it!

This wild rice salad is very versatile and is great as it can sit in the fridge for days and as I show in the video, you can add various dressings and sauces and ingredients to it so you have something different each day.

First I make an asian ginger dressing for the salad and I add soaked wakame and dulse (seaweeds). This would also be good with sunflower seeds.

Then I add some artichokes and make a creamy dill dressing with cashews.

Each time you have the salad you can have a different dressing or sauce on it and add a new ingredient to the salad.

WILD RICE SALAD (Ingredients)

  • Soaked, sprouted & cooked wild rice
  • Chopped celery
  • Chopped cucumber
  • Chopped green onions
  • Frozen peas thawed
  • Chopped bell pepper
  • Greens (salad mix)
  • Chopped kale
  • Shredded carrots

Asian Dressing

  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sesame oil
  • 1 Tbsp apple cider vinegar
  • 1/2 Tbsp lemon juice
  • 1/2 Tbsp tamari
  • 1/2 tsp grated ginger root

Stir or whisk ingredients in small deep bowl

In this salad I added soaked wakame & dulse (seaweeds) and used the asian dressing

Creamy Dill Dressing

  • 1/3 C soaked cashews (soaked for 1-2 hours)
  • 1/3 C + 1 Tbsp water
  • 1/2 Tbsp + 1 tsp apple cider vinegar
  • 1/4 clove garlic
  • 2 Tbsp parsley
  • 1/4 tsp dried dill
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • touch of pepper

Blend ingredients in blender until smooth. Taste and adjust to taste

In this salad I added artichokes and used the creamy dill dressing.

Off to bed now and up early tomorrow so…..
