No-Bake Vegan Protein Breakfast Bar

When a smoothie or fruit just isn’t enough for breakfast, have these vegan protein breakfast bars in your freezer and grab one to go!

We all love fast, easy snacks to make that can store in the freezer, am I right? Below is a video for:

No-Bake Vegan Protein Breakfast Bars

I wrote out the recipe at the end of the video for you.

These set in the freezer and you want to cut them once they have set. Cut them into the size you want and then store in container in freezer or freezer bags. Grab before you eat.

The ingredients I used were: whole oats (you could sub with quinoa flake or another flake or ground almonds), sesame seeds, sunflower seeds, currents, almond butter, dehydrated buckwheat (optional), ground flax, protein powder, hemp seeds, maple syrup (or another sweetener), coconut oil, cinnamon.

Now these bars would not be considered low fat. They are filling and are full of nutrients but should not be consumed in high quantities.

The are DELICIOUS!

These vegan protein breakfast bars are perfect for mid morning or afternoon when you are really hungry and you have to wait a while until you eat a meal. These will fill the gap and keep you going.

Great for kids before sports or you before or after the gym.

Because they are made with coconut oil, they will soften the longer they are out of the freezer. I highly suggest eating them as soon as you take them out of the freezer.

Instead of using coconut oil you could use date paste – lower in fat, but higher in sugar but also high in fibre.

How To Make Date Paste:

(Start with 1/4 C or 1/2 C of dates) – this amount would be too much date paste for above recipe unless you double recipe in video. But date paste can store in fridge and you can use it as a sweetener and even spread on cracker with almond butter, etc. It can be added to baking instead of sugar (add a bit of the date paste and a bit of sugar or honey)

  • Take pits of out the Medjool dates
  • Soak them in hot water
  • Add the dates and some of the soak water to a blender or food processor
  • Add water as need as you are mixing until it comes to thick date paste consistency

This date paste can be stored in the fridge for a week or maybe a bit more.
