Easy Raw Collard Wraps with Italian Pate

I have an all raw recipe for you today – I love my greens, I really do and collards, cooked or raw, are GREAT as well as oh so good for you.

In the southern US they eat a lot of collard greens but they cooked them to death as well as adding fat and other things to them so….they most likely lose a lot of their goodness.

Collards are very good when cooked, but to eat them raw they are slightly tough. You wouldn’t really make a salad with them unless you wilted them a bit. But, because they are heavier they make fantastic wraps. They hold this chunkier Italian pate really well. Yes, you could use a lettuce leaf but I highly suggest trying a collard wrap as they contain an outrageous amounts of vitamins. So eat them up! Cooked or raw.

COOKING COLLARDS

How I really like to cook collards are to first sauté garlic and onions in a frying pan with some oil. Then wash and chop the collards into small pieces. Mushrooms are great also added to this. After adding the chopped collards to the pan, add a bit of water and a touch of apple cider vinegar and cover with lid. Stir often. You can also add a splash of Tamari for flavour or salt and pepper.

I have spent the last couple days really going over what I want 2014 to be like for me. It is going to be a year of BIG change for me and I hope you are along for the ride.

It has been my passion for years to read everything on healing, mind/body connections, emotions and health, personal development, manifestation and of course nutrition and health. My experience as a personal trainer and yoga instructor definitely was the “what to do” part of health.

I believe in Wholistic Health – mind, body and soul. This year I can’t wait to share information and trainings on what I think are the 3 Keys To Health: What you eat, what you think and what you do.
