WHY EAT BUCKWHEAT AND WHAT THE HECK CAN YOU DO WITH IT?
Buckwheat is fantastic! It is very versatile and can be used at breakfast, in snacks, for lunch and for dinner. I share ore on this after the video below.
Buckwheat is gluten-free. It is actually a seed, not a grain, and is related to rhubarb. For every 100 g of buckwheat it has 13 g of protein.
It is very high in magnesium and fibre. It helps protect against high cholesterol and blood pressure. It also has cardiovascular benefits and helps stabilize blood sugar levels so is great for people with diabetes.

What Can You Do With Buckwheat?

BREAKFAST - You can cook buckwheat (like oatmeal) but I have tried that and don’t like the texture or flavour – but give it a try it if you wish. I find that soaking and sprouting it and then using it – either cold or warm is the best.
Add sprouted buckwheat to a bowl and add some chopped bananas (or other fruit), cinnamon, raisins (or other dried fruit), sweetener and some almond milk. This can be eaten warm or at room temperature.
Sprouted buckwheat can be dehydrated – and it will get really crunchy. Before you dehydrate it you can try adding some maple syrup and cinnamon. It is also great in granola.
SNACK – Buckwheat can be used in raw snacks or desserts. I use it a lot in making raw cookies and crackers and dehydrated buckwheat can be added to raw truffles to give them a crunch.
LUNCH & DINNER – If you make a buckwheat wrap you can stuff it just like you would a whole wheat or corn tortilla. The buckwheat wrap is more like a crepe so soft – and is great warm or cold.
And of course, as I used it in the video, buckwheat can be used in replace of rice so in any kind of stir fry.
