How to Transform A Salad so it Eats Like a Meal

I have been away at a conference in Orlando and was eating out a lot. Salads…..Hmmmmm, you know the kind – they contain a whole lot of lettuce but not a whole lot of anything else…..BORING!

No wonder people don’t order salads for a meal. NO wonder people do not think I get enough nutrients when I say I eat a higher raw diet.

BUT….MY SALADS – are NOT boring.  The possibilities for variations in salads are ENDLESS.

Because of the salads I ate while away, I was inspired to make this video today (when I was making myself a salad), showing you how to make a salad that EATS LIKE A MEAL! Below the video I have the recipe along with 2 recipes for oil free salad dressings.

SALAD

(Didn’t measure ingredients but this is what I added)

  • Mixed greens
  • Arugula
  • Kale
  • Parsley
  • Bell Pepper (I used yellow)
  • Cucumber
  • Bean and sunflower sprouts
  • Pumpkin seeds
  • 1 Medjool date chopped (didn’t show in video)
  • Shredded cabbage
  • Shredded carrots
  • Avocado

Like I mentioned in the video – if you have veggies washed, cut and in containers in the fridge, then making a salad is quick and easy!

GET PREPPING!

Of course add any other kind of great veggies to it such as cauliflower, tomatoes, broccoli, asparagus, etc – you get the drift.

For the SALAD DRESSINGS. I am giving you recipes to 2 hemp dressings. (Not the one I made in the video because it didn’t turn out that good.)   Here are two others:

CUCUMBER HEMP DRESSING

  • ¼ C water
  • 2 Tbsp hemp seeds
  •  C chopped cucumber
  • 2 Tbsp lemon juice
  • 1 Tbsp pumpkin seeds
  • 2 Tbsp chopped bell pepper
  • 1 Tbsp Nutritional Yeast (Red Star brand, available in bulk at health food store)
  •  clove of garlic
  • Salt & pepper to taste

This requires a blender. A magic bullet blender works great or a larger blender.

Place all ingredients in your blender and blend. Store in fridge for about 4-5 days.

HEMP ORANGE DRESSING

  • 2 Tbsp hemp seeds
  • ¼ C lemon or Apple Cider Vinegar (buy the kind with “the Mother”)
  • ¼ C orange juice (from an orange)
  • ¼ C extra virgin olive oil
  • ½ clove garlic grated
  • Salt & pepper to taste

This requires a blender. A magic bullet blender works great or a larger blender.

Place all ingredients in your blender and blend. Store in fridge for about 4-5 days.
