CRANBERRY PECAN TORTE WITH CHOCOLATE GANACHE

The Christmas (or holiday) season is a crazy busy time for most people. You may be having family or friends over for Christmas and are trying to do all your Christmas shopping as well as planning what you are going to serve everyone.

Every family has their traditional dishes and not too many people would have an “all raw” Christmas (or Holiday) meal. It is a time when we eat things we may normally not eat and indulge in sweets and desserts we usually do not eat.

If you are worried how you are going to eat healthy and not stray during this time, my advice to you is “do the best you can and do not stress over it.” Why I say this is because this is a special time of the year.  December may be full of lunches, dinners, parties, visiting and cocktails so what you can do is each time you are out or invited out – MAKE THE HEALTHIEST CHOICE YOU CAN MAKE WITH WHAT IS PRESENTED TO YOU.

Hopefully there will always be vegetables available (at least I hope so) and if you are not the one preparing the meal, then bring a large salad or one of your favourite veggie dishes. The host will probably be thankful you brought something and you will then have a dish you can eat without feeling guilty and one you can enjoy. Often holiday dinners include meat so I usually also make and or bring a lot of veggies. At these meals I do eat the potatoes and they fill me up. I have to admit I don’t really miss the meat because even when I ate meat I only ate a little bit and my plate consisted mostly of the veggies anyway.

What is a holiday celebration without dessert?

Below I have a really great Christmas (Holiday) dessert for you to make and serve to guests or bring to a dinner or party you are attending. I am not a real dessert person (just give me some good chocolate) but I made this with my “8 Week Coaching Group” and I really loved it! I wanted to share this because it is a really good one and it just “fits” this season.

CRANBERRY PECAN TORT

Chocolate Crust:

  • 1 C pecans finely ground
  • 2 Tbsp cacao
  • 2 Tbsp coconut oil, melted
  • 1 Tbsp agave

Mix together almonds, cacao,  coconut oil and agave. Pat in tart shell.

Filling :

  • 1 C cashews, soaked
  • ½ C cup filtered water
  • ½-¾ C coconut oil, melted
  • 4 Tbsp agave nectar
  • ½ C cranberries, chopped
  • 1/3 C pecans, chopped

In high speed blender, combine cashews and water. Blend until smooth.

Blend in coconut oil and agave nectar.

Remove to bowl and stir in cranberries and pecans.

Pour into crust. Refrigerate until set. This will take several hours, you may want to make this the night before.

Top with the chocolate ganache.

Chocolate Ganache:

  •  ¼ C cacao
  • 2 Tbsp coconut oil melted
  • ¼ C agave (best is warm so put bottle in bowl or container with hot water to warm it)

Put cacao powder in deep small bowl

Add coconut oil and whisk or stir with small spoon until smooth

Add agave and stir continuously and fast until the mixture is really smooth. Taste and adjust to taste

I also used this same recipe to make little cheesecakes. I have some soft muffin tins (forget what they are made of) and they are perfect for freezing little cheesecakes because they are so easy to pop out. These are perfect single serving cheesecakes!

Below is a picture of one of those little cheesecakes I made, it is cut in half so you can see what these look like on the inside.

Here is a picture of the cranberry pecan cheesecake and a pineapple coconut one I made in the muffin pans.

I encourage you to try this recipe and I am sure you will love it!! So will your guests and……it is NOT loaded with white flour or white sugar!! Yeah!!

During this holiday season I want you to focus on making the best and healthiest choices you can at any lunch, dinner, friend or family celebration you are at and just enjoy yourself. Treasure the time with family and friends and know that that is really what the season should be about. Feel the love that surrounds you and give thanks.

Begin the New Year with a renewed passion and focus on health (physical, emotional and spiritual) and eating whole, nutritious foods!
