WHEN YOU ARE CRAVING CHEESE……
I LOVE cheese. I don’t eat real cheese now but I was a cheddar cheese lover. Below is a recipe for a raw cheese sauce that I adapted from a couple recipes.
I was at a Raw Food Potluck in Nanaimo, BC and a friend Liz Forrest brought some onion bread and a raw cheese sauce. It looked like melted Cheese Whiz, yes at one time I was a real Cheese Whiz fan. So seeing this bowl of what resembled melted cheese and knowing that this is something I could eat was so great!!
Liz gave me the recipe and the next day I ran out to get the ingredient I did not have – pine nuts. Got to the check out and my small bag of pine nuts were $9.00! I could not do it. I set them aside and went home.
A few days later – still dreaming of the cheese sauce – I soaked some cashews and combined a couple recipes and came up with a raw cheese sauce of my own with ingredients I had in the house. I made this version of mine at a raw food class I had this past weekend and everyone loved it. You can thin it for a salad dressing – which is really good on kale – or make it thicker for a dip or spread.ENJOY!
RAW CHEESE SAUCE
- 1 C cashews
- ¼ clove of garlic clove
- 1 Tbsp lemon juice
- ½ to ¾ C water (depending on how thick you want it)
- 2.5 Tbsp Nutritional Yeast (Red Star)
- 1 tsp turmeric
- 1 tsp salt
- 2 Tbsp red bell pepper chopped
- 1 Tbsp hemp hearts
Put all in high speed blender and blend until smooth. This could also work in a food processor it would just turn out a bit gritty.
Please taste as you are making this and adjust to your taste. You may want to tweek it a bit – I say go for it!!
