HOW TO MAKE HEALTHY RAW ENERGY COOKIES
Below are 3 videos on how to make delicious and super nutritious raw power cookies. I love these and often have a bunch of these in my freezer and a couple with me in my computer bag. These are highly nutritious and really fill the gap when you are hungry and need a snack or something to hold you over until meal time.
These are made with a dehydrator and if you have one, you must try these or a variation of them. Please be creative and play with the recipe to make it your own and one that you will really LOVE! If you are going to do that, start with a small batch and write down what you put in them and the amounts so if you want to change it a bit later, then you can. That is what I do and it works great!

RAW POWER COOKIE RECIPE
- 1 Cup Buckwheat groats (sprouted)
- 1 C chopped banana
- 1 tsp cinnamon
- 1 tsp salt
- 1 1/2 C soaked almonds and walnuts combined
- 3/4 – 1 C combined soaked coconut chunks & raisins
- 6 Medjool dates (depending how sweet you like it)
- 1 Tbsp Lucuma powder (optional)
Almonds should soak for about 8-10 hours. Walnuts about 2 hours. Coconut and raisins I soaked for 2 hours. For instructions on how to soak and sprout buckwheat refer to an earlier post on my blog.

You can also spread the mixture on teflex sheets and cut into squares for raw energy bars.

As usual I encourage you to be creative and try your own ingredients. You can add goji berries, protein powder, spirulina (or another green powder), hemp seeds, brazil nuts (which I love in these cookies) and other dried fruits.
