I know I have not been doing many blog posts lately and I apologize for that. I have been very busy working at a new Restaurant in Nanaimo, BC that serves Raw and Vegan Food. Our focus is “Healthy Food To-Go”!
It has been quite an experience, a lot of fun and yes, a lot of work. The owners have been working almost around the clock. I have a new found respect for anyone who owns and operates a restaurant. I did not realize how sore I would get standing for 8, 9 or more hours in a row and just being on my feet the whole day and in a high-energy environment.
I really love meeting the people that come in and seeing someone really love their first “green smoothie”! So cool to get more people “into the green”. We have been serving a limited menu at the moment. Our Raw Pizza is a hit and it is so tasty!!! Even people who have never eaten raw and who love “real” pizza, absolutely love the pizza. We have a ton of great toppings including marinated, roasted veggies (in dehydrator).
Another rewarding aspect is informing people of raw food and what it is all about. They are, of course, amazed at how great and tasty the food is. We are finding that the public is ready for this. Even in a small city like Nanaimo – there is a very large population who wants healthy “fast” food and I am definitely one of them.

The recipe I have for you today is a raw burger. Love these! I tend to make them small and have with a salad. I sometimes crumble them into a salad. The below recipe is a carrot/pecan raw burger but the other day I altered it a bit by using Walnuts instead of pecans and zucchini instead of mushrooms. (I used what I had and you can too!).
Here is a picture of some I made – I made them small but you can make them any size you like.
Carrot Pecan Burgers
- 4 Carrots
- 1.5 C Pecans (or another nut or mix in some seeds also)
- 1/2 C shredded zucchini (dried off a bit in paper towel or a towel)
- 2 Tbsp cilantro (fresh)
- 2 green onions (more if you like)
- 1.5 Tbsp olive oil
- 1/2 tsp curry powder
- 1/2 tsp salt
- 1/4 tsp pepper
Blend carrots first.
Add rest of ingredients and blend.
Form into burger patties. Note that the larger you make them, the longer they take to dehydrate. Place the patties on teflex sheets of dehydrator trays.
Dehydrate about 7-8 hours, take them off teflex sheet turn them over and put on mesh sheet. Dehydrate them until you like the consistency.
