Fresh Cucumber Tomato Salad

Cucumber Tomato Salad

This is another really simple, fast and great tasting salad. It is perfect for the summer because it is cool and fresh.

Head to a Farmer’s Market on the weekend and get some fresh ingredients to make this with and you will notice the difference.

Cucumber Tomato Salad

English Cucumber

Cherry or Grape Tomatoes


Bell Pepper (optional)

Green Onion

Dressing Ingredients:

Olive Oil, Apple Cider Vinegar (I like Braggs ACV), Lemon juice

Cut veggies up into pieces and put into a bowl. Cut up cilantro (or parsley if you prefer) and add to veggies in bowl.

For dressing – combine olive oil, apple cider vinegar and some lemon juice. Stir until creamy and add to salad. Stir salad. Taste and add more dressing if needed.

This is actually better after it sits for a while in the fridge. It is also great the next day.

Why I don’t have exact measurements?

People always ask me for exact measurements. Sometimes it is easier to give exact measurements, but with salad dressing I find that really hard. I think it goes by personal taste and I feel that is the best way to do it. Each person is so different. Also, I usually make for 1 to 2 people. What if you are making this for a family? Then of course you will have to double or triple the recipe. Again, you will still have to test and taste and adjust.

With salad dressing the rule of thumb (well, my rule) is to start with the oil. When I make this for myself, I use about 2 tbsp of oil, 1 tbsp of apple cider vinegar and then a couple squeezes of lemon. I stir that really well and then taste. If it is too tart I add a bit more oil or I add a bit of sweetener such as agave or honey. If it is too oily then I add a bit more lemon juice (or apple cider vinegar).

So if you need exact measurements try this:

2 tbsp oil

1 tbsp apple cider vinegar

2 squeezes lemon

Stir well. You can also add some dry or fresh herbs to that. One of my favorite things to add to the dressing above is a bit of braggs or nama shoyu or even tamari. Another variation of the salad dressing is to add some lime juice instead of lemon juice.

So head out to a Farmer’s Market and pick up some fresh cucumbers, tomatoes (which are so incredible), some colourful bell peppers, some new green onions and some fresh herbs. The prices are usually cheaper than the supermarket (at least on the island here) and the taste – OH THE TASTE!!! So much better.
