RAW DAIRY FREE CHOCOLATE COCONUT ICE CREAM
Ice Cream and summer just go together, but not if you are lactose intolerant or prefer to eat raw food. Try this raw diary free ice cream and you won’t miss out on enjoying the creamy, cool, goodness that ice cream offers. What could be better on a hot summer evening than a cool bowl of chocolate ice cream. Even better when it is healthy and dairy free!
The picture is not that great because I made this for myself just tonight quickly last minute because I was craving something smooth, creamy, chocolate and cool. I thought I would share it with you so I took a picture before I demolished the whole bowl.
The “ice cream” for this recipe is frozen bananas and frozen mangos. I put them in my food processor with a bit of water. Then I blended them. I had to continually add a bit of water slowly and a little at a time so that it would continue to blend. I also had to stir it often. Still it was very fast and easy.
DAIRY FREE CHOCOLATE COCONUT ICE CREAM
- Handful of frozen Mangos
- 5 small pieces of frozen banana
- bit of water
- 1 – 1 1/2 tsp of cacao (add to taste)
- 1 tbsp of coconut – then another tsp of coconut sprinkled on after
This recipe would also work great with just frozen bananas. You could top it with blueberries or fresh strawberries or raspberries. Summertime is a great time to have fresh berries.
At this moment I am also making some home-made green ice tea to enjoy tomorrow.
GINGER GREEN TEA ICE TEA
Bowl water. Cut up some fresh ginger. Add ginger to tea pot. Steep some green tea.
When tea is done and still warm, add some honey or agave and squeeze some fresh lemon into the pot.
Let cool and then poor into glass pitcher and put in fridge. That is it!
A tasty, fast, cool drink to have on a hot summer day. I love home-made ice tea. I do not drink powdered ice tea at all. For one it contains preservatives and sugar – things I do not consume. I also prefer the taste of home-made ice tea. You can use any of your favourite teas.
Summer does not have to be a time when we compromise our healthy diet. There are alternatives that are delicious and nutritious!
